REXBURG — Do you ever crave homemade sweets, but don’t feel up to making them? How about funnel cakes, conchas, and churros? If you do, you are in luck!

Lesly Chilson and her husband have recently opened up their own bakery, SoCal Sweets and Treats, which offers baked goods for delivery. Lesly has always wanted to start her own business and has been visiting the Rexburg area for over 10 years and now lives here. She noticed that there were very few local bakeries and wanted to fill that need. 

Not far from Lesly’s childhood home there were bakeries everywhere. She explained that you couldn’t walk down the street without passing a few bakeries. This, along with the desire to bake from a young age, led Lesly to have amazing opportunities that allowed her to grow her baking skills. She started out helping bake when she was eight years old and continued to nurture that love. 

As she got older, she had the opportunity to work in a local bakery and make bread. While she had this experience, she also continued to learn and practice on her own. Lesly explained that it hasn’t always been easy, but that she loves baking and her business. She told me, “Bumps in the road are just learning experiences” and I couldn’t agree more. This small business owner has definitely put in the work and time to make her business succeed. 

When it comes to her menu, she has funnel cakes, conchas, and churros. These menu items were selected due to Lesly and others’ desires for them. Every time she and her husband would go to the fair, they would buy funnel cakes. However, she and her husband wanted funnel cakes more often than they would go to the fair so she decided to start making her own. As for the churros and conchas, she learned that a lot of individuals coming to Rexburg served missions in foreign countries and are familiar with and love these sweet treats. Lesly wanted her bakery to fulfill those cravings and help others enjoy these treats.
