REXBURG — Thursday, June 1, marked Tropical Smoothie Cafe’s official ribbon cutting here in Rexburg. Finally open after months of anticipation, the restaurant welcomed crowds of community members over its first week.

Rexburg’s Tropical Smoothie Cafe is a family affair. Alex Plummer, general manager and son to owners Nepal and Kelly Plummer says, “We’re just excited to be in town. We feel like there’s a niche to be filled. People want some healthier food and smoothies and we’re really happy to bring that to the community and be involved in the community a little bit more.” 

Originally started in Florida, Tropical Smoothie Cafe has expanded into a national chain, with the Rexburg opening making six locations in Idaho alone. Alex says, “I found Tropical Smoothie when I was serving my mission and just fell in love with it, ate it all the time, came back and I’d been missing it every day.” 

Tropical Smoothie Cafe offers a wide variety of smoothies, flatbreads, salads and more. “Everything we use is, you know, fresh fruits, fresh vegetables, some concentrates but nothing artificial, no coloring or anything like that,” Alex says. They also feature many options for smoothie add-ins, from protein powders to vitamins to nuts and seeds, making for a customizable drink experience. 

As part of opening weekend, Tropical Smoothie Cafe is offering special discounts on Friday and Saturday, June 2nd and 3rd, featuring both their specialty smoothies and flatbreads. Tropical Smoothie operates from 7 a.m. to 11 p.m. at 113 S 2nd West, Rexburg, next to Jimmy John’s.
