REXBURG—The owners of the Rexburg Port of Subs franchise announced a new local ice cream parlor called Rinky Dinks, which will be sharing the building with the company by late October or early November.

Rinky Dinks plans to serve various desserts made from scratch, developed by Rinky Dinks’ management and crew.

Customers can choose desserts such as sundaes, scooped/soft serve ice cream, ice cream floats, and ice cream-topped waffles.

“Rinky Dinks will be a fun, old-fashioned family atmosphere with menu choices to please everyone,” Manager Beth Merrill said. “The ice cream parlor will likely open later and stay open after the normal Port of Subs hours. Port of Subs is a franchise so the menu and operations of Port Of Subs will not be affected. We will, however, have some crossover deals/offers from time to time.”

The Port of Subs Management Team is excited about the potential that the parlor will have.

“I am so excited to help bring this vision to life,” Social Media Intern Alyson Dow said. “Not many college students have the opportunity to market a brand new business, and doing so has been an incredible experience. I am looking forward to seeing the end result.”

“It has really been a collaborative effort,” Merrill said. “There is a group of three brothers that run each business in our building so there are a lot of great opinions on how things should go. There’s a lot that goes into (opening Rinky Dinks); from recipe development, social media marketing, in-person marketing, etc., but I am really looking forward to what the end result will be.”
