REXBURG—There is just something special about a sandwich. Maybe it’s because every time I eat them I am reminded of all of those mother/daughter dates to the local sandwich shop for lunch. Mom would pick me up early from school and we’d both order the usual, and, starving from a day’s work of learning, I’d scarf it down so fast my mom would have to tell me to slow down.

Sandwiches remind me of my childhood.

Millhollow, located at 48 S. First East, brings back that happy and familiar feeling of home. Aaron and Connie Romney are the owners of this restaurant that has brought so many people joy throughout the years.

Aaron Romney spoke with me about his family’s business that has been around for 38 years.

Millhollow hasn’t always served their beloved sandwiches. Romney shared that his father so badly wanted to bring frozen yogurt to Idaho because there wasn’t any here at the time. He started in 1983 in a small building in downtown Rexburg on Carlson Avenue. They named the business after the street the family lived on. They always wanted it to be a family-friendly environment that embodied the feeling of home. In 1995, Romney himself designed a cabin-like structure where Millhollow now resides.

What is more homey than a cabin? A cabin you can eat sandwiches and frozen yogurt in! The current menu includes classic hot and cold sandwiches such as club, BLT, Italian, and turkey. Customers choose their fixings for the sandwich from a long list of sandwich enhancers. They have a variety of different breads but most who eat there will tell you to get the sourdough bread! It is made from scratch every day and is one of the most loved items on the menu.

Millhollow also offers an assortment of Fro-Yo flavors that change daily, as well as other soft serve treats such as sundaes and shakes.

According to Romney, the best selling sandwich is a hot, toasted turkey BLT with peppered bacon. Romney personally likes to switch it up. He retorts genuinely, “They’re all good. Doesn’t matter what you get.” 

When asked what he loves about his business, Romney gushes, “I love the customers. We have repeat customers of 10+ years. I love my employees who are like my second family. I love getting to work with my wife each day. It is very rewarding to work with family.”

The Romney family hopes that Millhollow will continue to be a unique, local spot that brings a sense of home and fun to all who visit.
