REXBURG, Idaho — Space Crepes Rexburg opened in September in the same storefront as Crush Artisanal drinks, bringing more variety to dessert options in Rexburg’s restaurant scene.
“College students like sweet things and there’s not a lot of variety because Rexburg is a small town,” said Lilianna Ramirez, the marketing manager for Space Crepes Rexburg.
The menu consists of eight crepes. Five draw on space-centered puns such as Black Hole and Solar Flare while the other three are seasonal flavors such as pumpkin pie and apple pie.
Ramirez considers the Down to Earth crepe, which has strawberries, banana, whipped cream and nutella, and the Black Hole crepe, which has Oreo cheesecake filling, raspberry sauce, strawberries and white chocolate sauce, to be the restaurant’s signature dishes.
The space theme originates from a desire to draw in a specific audience.
“We want to bring in fans of Star Wars and Star Trek as well as those who like desserts,” Ramirez said.
The ingredients for the American-style crepes are bought fresh every day and all the batters, sauces and fillings are homemade.
Ramirez said Space Crepes hopes to launch new products in the future including catering crepe cakes, a forty layer cake with layers of crepe and whipped cream, and savory crepes within the next year.
